Chicken Biryani Recipe with Shan Masala

There’s nothing quite like the aroma of freshly cooked Chicken Biryani — a timeless dish loved across generations. At Ambas Foods, we make it easy to recreate this rich, flavourful meal with our range of authentic spices and fresh ingredients.

Today, we're sharing a fool proof Chicken Biryani recipe using the ever-popular Shan Biryani Masala – perfect for weekend family meals, celebrations, or simply when you're craving a taste of home.

Ingredients:

From Ambas Foods Grocery:

  • 1 pack Shan Biryani Masala
  • 1kg Chicken (bone-in) – available fresh from our Butcher Counter
  • 2 cups Basmati Rice
  • 2 medium Onions, sliced
  •  1 cup Yogurt
  •  2 medium Tomatoes, chopped
  •  1 tbsp Ginger Garlic Paste
  • ½ cup Cooking Oil or Ghee
  •  Fresh Coriander & Mint Leaves
  • Green Chillies (optional)
  • Fried Onions (optional topping)
  • Lemon slices (optional)

Pantry items:

  • Salt to taste
  • Water as needed

Instructions:

Step 1: Marinate the Chicken
In a large bowl, mix:

  • Chicken
  • Shan Biryani Masala (1 packet)
  • Yogurt
  • Ginger garlic paste
  • A little oil

Let it marinate for at least 30 mins (or overnight for best flavour).

Step 2: Cook the Chicken Masala
In a pot, heat oil and sauté onions until golden brown. Add tomatoes and cook until soft. Add the marinated chicken and cook until fully done and oil separates.

Step 3: Cook the Rice
Boil basmati rice in a separate pot with salt and whole spices (optional) until 70–80% done. Drain and set aside.

Step 4: Layer the Biryani
In a large pot, layer:

  • Cooked chicken masala
  • A layer of rice
  • Chopped coriander, mint, green chillies, and fried onions
  • Repeat layers if needed

Cover tightly and steam on low heat (dum) for 20–25 minutes.

Step 5: Serve & Enjoy
Fluff gently and serve hot with raita, salad, or chutney.
